Can I solicit feedback from students when the course is live?

Absolutely! We call those “pulse checks” and there are several ways you can get a quick pulse check from students at the end of every week/month/unit, etc. You can use google forms to gauge student feedback weekly or biweekly (just send students the link, or add the link to your course site). There is also nothing wrong with a good ol' paper form (it also doubles as a way to collect attendance!)
